Description
These Chocolate Pecan Turtle Clusters are a rich and decadent treat made with toasted pecans, gooey caramel, and a smooth chocolate coating. They’re incredibly easy to make and require only a handful of ingredients, yet they taste like something from a gourmet candy shop. Perfect for holiday gifts, party platters, or simply indulging in a sweet bite at home, these clusters bring together crunchy, chewy, and chocolatey goodness in every bite.
Ingredients
2 cups pecan halves
1 cup caramel sauce (store-bought or homemade)
12 oz semi-sweet chocolate chips
1 tablespoon unsalted butter
1/2 teaspoon vanilla extract
Pinch of sea salt (optional)
Instructions
Preheat your oven to 350°F.
Spread the pecan halves in a single layer on a baking sheet.
Toast in the oven for 5 to 7 minutes, or until fragrant. Remove from the oven and let cool slightly.
In a small saucepan over low heat, warm the caramel sauce until smooth and pourable. Stir occasionally. If using store-bought caramel, you may microwave it in short intervals instead.
In a separate saucepan or microwave-safe bowl, combine the chocolate chips and butter.
Melt gently over low heat, stirring frequently until smooth.
Remove from heat and stir in the vanilla extract.
Line a baking sheet with parchment paper.
Arrange 5 to 6 toasted pecan halves in small clusters.
Spoon a small amount of warm caramel over each cluster, just enough to hold the nuts together.
Spoon the melted chocolate over the top of each cluster, fully covering the caramel and pecans.
Place the baking sheet in the refrigerator for at least 30 minutes, or until the clusters are set.
Remove from the refrigerator.
Gently peel the clusters from the parchment paper.
If desired, sprinkle a pinch of sea salt over the top of each one.
Serve immediately or store in an airtight container in the refrigerator.
Notes
For the best results, be sure to toast the pecans—this step enhances their flavor and gives the clusters a satisfying crunch. If you’re using store-bought caramel, opt for a thicker sauce that holds its shape well. For a fancier finish, a light sprinkle of flaky sea salt on top of each cluster adds a perfect balance to the sweetness. These candies store well in the fridge and also freeze beautifully, making them a great make-ahead option for holidays and special occasions.
