Ingredients
For the Cod:
4 cod fillets (about 6 oz each)
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1 cup cold sparkling water
Vegetable oil for frying
For the Onion Rings:
2 large onions, sliced into 1/2-inch rings
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon paprika
1/2 teaspoon salt
3/4 cup cold sparkling water
For Serving:
Lemon wedges
Tartar sauce or your favorite dipping sauce
Instructions
Peel and slice onions into 1/2-inch rings. Separate the rings and set aside. Pat cod fillets dry with paper towels and set aside.
In a large bowl, whisk together 1 cup flour, 1 teaspoon baking powder, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Gradually add 1 cup cold sparkling water, whisking until smooth. Let the batter rest while preparing the onion rings.
In a separate bowl, combine 1 cup flour, 1 teaspoon baking powder, 1/2 teaspoon paprika, and 1/2 teaspoon salt. Slowly whisk in 3/4 cup cold sparkling water until smooth.
Heat vegetable oil in a deep fryer or heavy-bottomed pot to 350°F. Line a baking sheet with paper towels.
Dip cod fillets into the batter, allowing excess to drip off, then gently lower into the hot oil. Fry in batches for 5 to 6 minutes, turning once, until golden brown and cooked through. Transfer to the prepared baking sheet.
Dip onion rings into their batter and fry in batches for 2 to 3 minutes until crispy and golden. Remove with a slotted spoon and place on the paper towels to drain.
Serve the cod and onion rings hot with lemon wedges and dipping sauce.
Notes
Make sure the sparkling water is very cold for the crispiest batter. Do not overcrowd the fryer or pot, as this can lower the oil temperature and lead to soggy results. For a spicier twist, add a pinch of cayenne pepper to either batter. To keep fried items warm and crisp while working in batches, place them in a 200°F oven on a wire rack.
