For the Loaf:

  • 2 cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 3 large eggs
  • 1 tablespoon lemon zest
  • ¼ cup fresh lemon juice
  • ½ cup whole milk
  • ½ teaspoon vanilla extract

For the Glaze:

 

  • 1 cup powdered sugar
  • 2 tablespoons fresh lemon juice

Instructions

  • Preheat Oven & Prepare Pan:
    Preheat the oven to 350°F. Grease and flour a 9×5-inch loaf pan or line it with parchment paper.

  • Mix Dry Ingredients:
    In a medium bowl, whisk together flour, baking powder, and salt. Set aside.

  • Cream Butter & Sugar:
    In a large mixing bowl, beat butter and sugar until light and fluffy.

  • Add Eggs & Flavoring:
    Add eggs one at a time, mixing well after each addition. Stir in lemon zest, lemon juice, and vanilla extract.

  • Combine Dry & Wet Ingredients:
    Gradually mix in the dry ingredients, alternating with milk, beginning and ending with the flour mixture. Mix until just combined.

  • Bake:
    Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted in the center comes out clean.

  • Cool:
    Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  • Prepare & Apply Glaze:
    In a small bowl, whisk together powdered sugar and lemon juice until smooth. Drizzle over the cooled loaf.

 

  • Serve:
    Slice and enjoy your zesty lemon loaf!

  • For Extra Moisture: Add 2 tablespoons of sour cream or Greek yogurt to the batter for a richer texture.
