These Strawberry White Chocolate Cake Mix Cookies are soft, chewy, and bursting with sweet strawberry flavor. Made with a simple cake mix base, they come together quickly with minimal effort. The combination of creamy white chocolate chips and optional M&M’s adds a fun and delicious twist. Perfect for a quick treat, special occasions, or just because you deserve something sweet!

  • 1 box (15.25 oz) strawberry cake mix
  • ½ cup unsalted butter, melted
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 4 oz cream cheese, softened
  • 1 cup white chocolate chips

 

  • ½ cup M&M’s (optional)

Instructions

1. Preheat & Prep:
Preheat the oven to 350°F. Line a baking sheet with parchment paper.

2. Mix Dough:
In a large bowl, beat the cream cheese, melted butter, egg, and vanilla extract until smooth. Add the cake mix and stir until well combined. Fold in the white chocolate chips and M&M’s, if using.

3. Shape Cookies:
Scoop tablespoon-sized portions of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.

4. Bake:
Bake for 10-12 minutes or until the edges are set. The centers may look slightly soft but will firm up as they cool.

 

5. Cool & Serve:
Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy!

Notes

  • Cream cheese makes these cookies extra soft and rich.
  • Store in an airtight container for up to 5 days.
  • Try adding freeze-dried strawberries for more fruity flavor.
